  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain the pasta and rinse with cold water to stop the cooking process and cool it down. Drain well.
  2. Mix vegetables and dressing: In a large bowl, combine the diced cucumber, cherry tomatoes, bell peppers, red onion, black olives, and celery. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, black pepper, garlic powder, and dried oregano until smooth.
  3. Combine and chill: Add the cooled pasta to the vegetable mixture, then pour the dressing over the top. Toss everything gently until well coated. Stir in the fresh parsley and adjust seasoning if needed. Cover the salad and refrigerate for at least 2 hours to let flavors meld before serving.
