Ingredients

Scale

Blackened Chicken

  • 2 blackened chicken breasts (or thighs)

Sandwich Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon blackened seasoning
  • 2 teaspoons lemon juice

Assembly

  • 2 Kaiser buns
  • 1 tablespoon butter
  • 1 ounce Colby Jack cheese (sliced)
  • 2 leaves romaine lettuce
  • 1/4 cup sliced onion
  • 1/2 avocado (sliced)

Instructions

  1. Prepare the sandwich sauce: In a small bowl, whisk together mayonnaise, ketchup, blackened seasoning, and lemon juice until well combined. Cover and refrigerate until ready to use to allow flavors to meld.
  2. Heat the blackened chicken: If using pre-cooked blackened chicken, heat a skillet over medium heat. Place chicken breasts in the skillet and cook for 1-2 minutes on each side until warmed through. Remove from heat and set aside.
  3. Toast the buns: In the same skillet, melt the butter over medium heat. Place each Kaiser bun half cut side down in the skillet and toast until golden brown and crispy. Remove and set aside.
  4. Assemble the sandwich: Spread the prepared sandwich sauce evenly over the bottom halves of the toasted buns. Layer with warm blackened chicken, a slice of Colby Jack cheese, romaine lettuce leaves, sliced onions, and avocado slices. Top with the remaining bun halves.
  5. Serve: Serve the sandwiches immediately while warm and enjoy the perfect balance of smoky, creamy, and fresh flavors.

Notes

  • You can blacken your own chicken by seasoning breasts generously with blackened seasoning and cooking in a hot skillet until cooked through.
  • For extra heat, add sliced jalapeños or a dash of hot sauce to the sandwich sauce.
  • Substitute Kaiser buns with brioche or ciabatta rolls for different textures.
  • Leftover sandwich sauce can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, use reduced-fat mayonnaise and cheese.
