4.7 from 148 reviews

A delicious and elegant breakfast or brunch option featuring toasted sourdough bread topped with creamy Garlic & Herb Boursin cheese, perfectly cooked eggs, fresh arugula, juicy cherry tomatoes, and a drizzle of tangy balsamic glaze.

Ingredients

Scale

Toast

  • 2 slices sourdough bread
  • 1 tablespoon butter (divided)

Eggs

  • 2 eggs

Toppings

  • 2 tablespoons Garlic & Herb Boursin cheese
  • ½ cup arugula
  • ¼ cup cherry tomatoes, quartered
  • Drizzle of balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Heat the skillet: Place a skillet over medium to medium-high heat. Add ½ tablespoon of butter and spread it evenly until melted to prepare for toasting the bread.
  2. Toast the bread: Place the sourdough slices in the skillet and toast one side for 2-3 minutes until golden and crispy. Flip the bread and toast the other side for 1-2 minutes. Remove the toasted bread from the skillet and set aside.
  3. Cook the eggs: Lower the heat to low. Add the remaining ½ tablespoon of butter to the skillet. Crack the eggs into the skillet and cook them to your preferred level of doneness, whether sunny-side up, over-easy, or fully cooked.
  4. Assemble the toast: Spread 1 tablespoon of Garlic & Herb Boursin cheese evenly over the top side of each slice of toasted sourdough bread. Place a cooked egg on top of each slice. Then add fresh arugula and quartered cherry tomatoes.
  5. Add finishing touches: Drizzle a small amount of balsamic glaze over the assembled toast for a touch of sweetness and acidity. Season with salt and pepper to taste. Serve immediately while warm.

Notes

  • For a richer flavor, you can substitute the butter with olive oil or a compound herb butter.
  • Adjust the amount of balsamic glaze to your preference; a little goes a long way in adding brightness.
  • Feel free to add cooked bacon or smoked salmon for extra protein.
  • Use gluten-free bread to make this recipe gluten-free.
  • Cook eggs to personal preference, but over-easy or sunny-side up works best to keep yolks runny and delicious.
