Instructions

  1. Prepare the vegetables. Peel and dice the potatoes and chop the onion. If using fresh corn, remove kernels from the cob.
  2. Sauté the onion. In a large pot, heat olive oil or butter over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes.
  3. Add potatoes and corn. Stir in the diced potatoes and corn kernels, coating them in the onion mixture.
  4. Add broth and seasonings. Pour in the vegetable or chicken broth and sprinkle the Cajun seasoning over the vegetables. Season with salt and pepper to taste. Bring the mixture to a boil.
  5. Simmer the chowder. Reduce heat to low, cover the pot, and let the soup simmer for 20-25 minutes until the potatoes are tender and the flavors have melded.
  6. Incorporate the cream. Stir in the heavy cream and continue to cook on low heat for another 5 minutes, allowing the chowder to thicken slightly without boiling.
  7. Adjust seasoning and serve. Taste the chowder and adjust salt, pepper, or Cajun seasoning as needed. Serve hot, optionally garnished with fresh herbs or a sprinkle of cheese.

Notes

  • You can use frozen corn if fresh is not available; just add it directly to the pot with the potatoes.
  • If preferred, substitute half-and-half or whole milk for the heavy cream for a lighter chowder.
