Vegetables
- 4 cups corn kernels (fresh or frozen)
- 2 medium potatoes, peeled and diced (about 2 cups)
- 1 medium onion, diced

- Prepare the vegetables. Peel and dice the potatoes and chop the onion. If using fresh corn, remove kernels from the cob.
- Sauté the onion. In a large pot, heat olive oil or butter over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes.
- Add potatoes and corn. Stir in the diced potatoes and corn kernels, coating them in the onion mixture.
- Add broth and seasonings. Pour in the vegetable or chicken broth and sprinkle the Cajun seasoning over the vegetables. Season with salt and pepper to taste. Bring the mixture to a boil.
- Simmer the chowder. Reduce heat to low, cover the pot, and let the soup simmer for 20-25 minutes until the potatoes are tender and the flavors have melded.
- Incorporate the cream. Stir in the heavy cream and continue to cook on low heat for another 5 minutes, allowing the chowder to thicken slightly without boiling.
- Adjust seasoning and serve. Taste the chowder and adjust salt, pepper, or Cajun seasoning as needed. Serve hot, optionally garnished with fresh herbs or a sprinkle of cheese.

- You can use frozen corn if fresh is not available; just add it directly to the pot with the potatoes.
