  • 1 cup (200g) granulated sugar

Instructions

  1. Prepare the pan: Line a 9×13 inch baking dish with parchment paper or lightly grease it to prevent sticking.
  2. Cook the toffee base: In a heavy-bottomed saucepan over medium heat, melt the unsalted butter. Add the granulated sugar and stir continuously with a wooden spoon or heat-resistant spatula. Continue cooking and stirring until the mixture reaches the hard crack stage, about 300°F (150°C), or until a small amount dropped into cold water hardens and breaks easily.
  3. Pour over nuts: Immediately pour the hot toffee mixture evenly over the prepared pan. Sprinkle the chopped nuts evenly over the hot toffee layer, pressing them gently into the surface.
  4. Add chocolate topping: While the toffee is still warm, sprinkle the semisweet chocolate chips over the nuts. Let sit for a few minutes until the chocolate softens, then spread it evenly with a spatula to cover the surface completely.
  5. Set and break: Allow the toffee to cool at room temperature until fully set and firm, about 1-2 hours. Once set, break into bite-sized pieces and store in an airtight container.
