Scale

Main Ingredients

  • 200g feta cheese
  • 4 medium tomatoes, halved
  • 4 cloves garlic, peeled
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano or mixed Italian herbs
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Roast Feta and Vegetables: Preheat the oven to 400°F (200°C). Place the feta cheese, halved tomatoes, and whole garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle dried oregano on top. Roast for 20-25 minutes until the tomatoes are softened and slightly caramelized and the feta is golden.
  2. Blend the Soup: Transfer the roasted feta, tomatoes, garlic, and any juices on the sheet into a blender. Add the broth and blend until smooth and creamy.
  3. Heat Through: Pour the blended mixture into a saucepan and heat over medium heat until warmed through, stirring occasionally. Adjust seasoning with salt and pepper as needed.
  4. Serve: Ladle the hot soup into bowls and optionally garnish with fresh herbs or a drizzle of olive oil. Serve immediately.

Notes

  • For a vegan version, substitute feta with a plant-based cheese alternative and use vegetable broth.
  • You can add a pinch of red pepper flakes for a subtle heat.
  • Serve with crusty bread for a complete meal.
  • This soup can be stored in the refrigerator for up to 3 days.
