Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain the pasta, reserving 1/4 cup of pasta water.
  2. Prepare Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned. Add the chopped sun-dried tomatoes and cook for an additional 2 minutes to release their flavor.
  3. Add Cream: Pour in the heavy cream and stir to combine. Let the mixture simmer gently for 3-4 minutes until it slightly thickens.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy tomato sauce. Toss to coat the pasta evenly. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  5. Add Parmesan and Season: Stir in the freshly grated Parmesan cheese until melted and incorporated. Season with salt and freshly ground black pepper to taste. Remove from heat.
