Ingredients

Scale

Salmon

  • 4 salmon fillets (about 6 oz each)
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil

Creamy Tuscan Sauce

  • 3 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • 1 cup spinach (fresh)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper. Heat the olive oil in a large skillet over medium-high heat to prepare for searing.
  2. Cook the Salmon: Place the salmon fillets in the skillet, skin side down if skin is present. Cook for 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from the skillet and set aside to keep warm.
  3. Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes and cook for an additional 1-2 minutes to meld flavors. Pour in the heavy cream and bring the mixture to a simmer. Add the fresh spinach and cook until wilted. Stir in the grated Parmesan cheese and Italian seasoning, stirring continuously until the cheese melts and the sauce is rich and creamy. Adjust seasoning with salt and pepper as needed.
  4. Combine and Serve: Return the cooked salmon fillets to the skillet, spoon the creamy Tuscan sauce over the top to coat evenly. Garnish with freshly chopped parsley and serve warm with your favorite side, such as pasta, rice, or a crisp salad.

Notes

  • For added depth, use sun-dried tomatoes packed in oil for the best flavor.
  • Ensure you do not overcook the salmon to maintain moisture and tenderness.
  • Hearty side dishes like garlic mashed potatoes or crusty bread pair excellently with this dish.
  • Fresh spinach can be substituted with kale or Swiss chard if preferred.
  • Leftover sauce can be refrigerated in an airtight container for up to 2 days.
