Instructions

  1. Prepare the Potatoes: After peeling and grating the potatoes, place them in a clean kitchen towel and squeeze out as much excess moisture as possible to ensure crispy pancakes.
  2. Mix Batter: In a large mixing bowl, combine the grated potatoes, eggs, flour, and salt. Stir well until the mixture is uniform and holds together.
  3. Form Patties: Using your hands or a spoon, shape the potato mixture into small, flat round patties, about 3 inches in diameter and 1/2 inch thick.
  4. Heat Oil: Pour vegetable oil into a large skillet over medium heat and heat until shimmering hot but not smoking.
  5. Fry Pancakes: Carefully place the patties in the hot oil, making sure not to overcrowd the pan. Fry for about 3–4 minutes on each side until golden brown and crispy.
  6. Drain Excess Oil: Remove the pancakes from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
