Instructions

  1. Prepare the Dough: In a mixing bowl, whisk together flour, baking soda, and salt. In a separate large bowl, beat softened butter with brown sugar and granulated sugar until creamy. Add the egg and vanilla extract, beating well to combine. Gradually mix in the dry ingredients until a soft dough forms.
  2. Roll Out the Dough: On a lightly floured surface, roll the dough into a rectangle approximately 12 by 8 inches.
  3. Add the Filling: Brush the melted butter evenly over the dough rectangle. In a small bowl, combine brown sugar and cinnamon, then sprinkle this mixture evenly over the buttered dough.
  4. Form the Roll: Starting from one of the longer edges, carefully roll the dough tightly into a log shape. Pinch the seam to seal and wrap the dough roll in plastic wrap. Refrigerate for at least 1 hour to firm up.
  5. Slice the Rolls: Preheat the oven to 350°F (175°C). Remove the dough roll from the refrigerator and slice into 1/2-inch thick rounds using a sharp knife.
  6. Bake: Place the sliced cookie rolls on a parchment-lined baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers are set.
