Pie Crust
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 2–3 tablespoons ice water
Peach Filling
- 3 cups peeled and sliced fresh peaches (about 3–4 medium peaches)
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon

- Prepare the Pie Crust: In a mixing bowl, combine flour and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until dough holds together. Press the dough evenly into the bottom of a greased 9×9-inch baking pan, forming the base for the bars.
- Make the Peach Filling: In another bowl, toss sliced peaches with sugar, cinnamon, and lemon juice until well combined, making sure the peach slices are evenly coated with the sugar and spice mixture.
- Assemble the Bars: Spread the peach filling evenly over the pressed pie crust in the pan, distributing it in an even layer to ensure consistent baking and flavor throughout.
