Ingredients

Scale

Dry Ingredients

  • 1/2 cup Perfect Keto Collagen (about 50g)
  • 6 tbsp coconut flour
  • 1 tsp xanthan gum
  • 1 tsp keto-friendly baking powder
  • 1 pinch sea salt

Wet Ingredients

  • 5 eggs (whites and yolks separated)
  • 3 tbsp full-fat coconut milk
  • 1 tbsp coconut oil (melted + more for greasing)

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the bread.
  2. Mix Dry Ingredients: In a medium bowl, combine Perfect Keto Collagen, coconut flour, xanthan gum, keto-friendly baking powder, and sea salt thoroughly.
  3. Whisk Wet Ingredients: In a separate small bowl, whisk together the coconut milk, egg yolks, and melted coconut oil until smooth.
  4. Whip Egg Whites: In another clean bowl, beat the egg whites until stiff peaks form to create volume for the bread.
  5. Fold Ingredients: Gently fold the wet mixture and dry ingredient mixture into the whipped egg whites, mixing carefully to keep the batter light and airy.
  6. Prepare Loaf Pan: Grease a 9x5x3-inch loaf pan with coconut oil to prevent sticking.
  7. Bake: Pour the batter into the prepared loaf pan and bake in the preheated oven for 40 minutes until the bread is golden and cooked through.
  8. Cool and Slice: Allow the bread to cool completely in the pan before removing and slicing.

Notes

  • Ensure egg whites are whipped properly for a fluffy texture.
  • Use a keto-friendly baking powder to keep the recipe low-carb.
  • Coconut flour absorbs a lot of moisture; avoid substituting with other flours without adjusting liquid ingredients.
  • Allow bread to cool fully to prevent crumbling when sliced.
  • Store bread in an airtight container in the refrigerator for up to 5 days.
  • Optionally toast slices before serving for added texture.
