Fritters

  • 250g lamb mince
  • 1 cup cooked chickpeas, mashed

  • 1/4 tsp chili powder (optional)
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 1 egg, beaten
  • 3 tbsp plain flour
  • 2 tbsp olive oil (for frying)

Wraps & Serving

  • 4 large wraps
  • Fresh lettuce leaves (optional)
  • Yogurt or tahini sauce for drizzling (optional)

Instructions

  1. Prepare the fritter mixture: In a large bowl, combine the lamb mince, mashed chickpeas, finely chopped onion, minced garlic, ground cumin, coriander, smoked paprika, chili powder if using, salt, pepper, and chopped parsley. Mix thoroughly to distribute the spices evenly.
  2. Bind the mixture: Add the beaten egg and flour to the meat and chickpea mixture. Stir well to create a sticky batter that will hold together when formed into fritters. If the mixture is too wet, add a little more flour.
  3. Form the fritters: Using your hands or a spoon, shape the mixture into small patties or fritters, about 2-3 inches in diameter and 1/2 inch thick.
  4. Cook the fritters: Heat olive oil in a large skillet over medium heat. Carefully place the fritters in the pan, cooking for about 4-5 minutes on each side or until golden brown and cooked through. Avoid overcrowding the pan; cook in batches if necessary.
  5. Warm the wraps: While the fritters are cooking, lightly warm the wraps in a dry skillet or microwave until soft and pliable.
  6. Assemble the wraps: Place lettuce leaves on each wrap, add 2-3 lamb and chickpea fritters, and drizzle with yogurt or tahini sauce if desired. Roll up the wraps tightly and serve immediately.
