Ingredients

Scale

Vegetables

  • 2 medium zucchinis, diced
  • 1 cup fresh or frozen corn kernels

Other Ingredients

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash and dice the zucchinis into small bite-sized pieces, and if using fresh corn, cut the kernels off the cob. Set aside.
  2. Sauté Zucchini and Corn: Heat the butter in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, then add the zucchini and corn. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.
  3. Season and Add Parmesan: Season the sautéed vegetables with salt and black pepper to taste. Sprinkle the grated Parmesan cheese over the top and stir gently to combine, allowing the cheese to melt slightly and coat the vegetables.
  4. Serve Warm: Remove from heat and transfer to a serving dish. Serve immediately while warm as a delicious side to complement your main course.

Notes

  • Use fresh corn in season for the best flavor, or frozen corn as a convenient alternative.
  • For a richer flavor, you can substitute butter with olive oil or a mix of both.
  • Add a pinch of red pepper flakes for a little heat if desired.
  • Grated Parmesan can be substituted with Pecorino Romano for a sharper taste.
  • This dish pairs well with grilled meats, roasted chicken, or pasta dishes.
