Ingredients

Scale

Seafood

  • 12 oz shrimp, peeled and deveined

Vegetables

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced

Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil (for stir-frying)

Instructions

  1. Prepare Ingredients: Rinse the shrimp under cold water and pat dry. Trim the asparagus and cut into 2-inch pieces. Slice the mushrooms and mince the garlic.
  2. Heat the Pan: Heat vegetable oil in a large skillet or wok over medium-high heat until hot but not smoking.
  3. Cook the Shrimp: Add the shrimp to the pan and stir-fry for 2-3 minutes until they start turning pink and are almost cooked through.
  4. Add Vegetables: Add the minced garlic, asparagus, and mushrooms to the pan. Continue stir-frying for 4-5 minutes until the vegetables are crisp-tender.
  5. Add Sauce and Finish Cooking: Pour in the soy sauce and stir everything together, cooking for another 1-2 minutes until the shrimp are fully cooked and the flavors are well combined.
  6. Serve: Remove from heat and serve immediately with steamed rice or noodles if desired.

Notes

  • For extra flavor, add a teaspoon of grated ginger along with garlic.
  • Substitute tamari for soy sauce to make the dish gluten-free.
  • Adjust soy sauce quantity according to your salt preference.
  • Cook shrimp just until pink to avoid toughness.
