These Shredded Beef Burritos are a delicious and hearty Mexican-inspired meal featuring tender, flavorful shredded beef combined with cheese, corn, black beans, and Mexican red rice, all wrapped in soft flour tortillas. Wraps and Fillings

  • 8 large extra soft flour tortillas (10″/26cm)
  • 1 1/2 to 2 cups shredded cheese (Monterey Jack recommended)
  • 3 to 4 cups Mexican shredded beef with sauce (tossed or separated)
  • 2 cups cooked Mexican red rice
  • 400g (14oz) can corn kernels, drained
  • 400g (14oz) can black beans, drained

Instructions

  1. Warm Tortillas: Microwave half of the tortillas very briefly for about 15 seconds to soften them, which prevents cracking when rolling.
  2. Prepare Work Area: Place one tortilla on a clean work surface and cover the remaining tortillas with a tea towel to keep them warm and pliable.
  3. Assemble Burrito: Spread shredded cheese down the center of the tortilla. Top with approximately 1/3 cup of shredded beef, then add some corn kernels, black beans, and finally 1/4 cup of Mexican red rice.
  4. Roll Burrito: Carefully roll the tortilla around the fillings tightly. Wrap the burrito in foil to hold its shape securely.
  5. Cook Burrito: If serving immediately, preheat a skillet over medium heat. Place the wrapped burritos in the skillet and cook for 4 to 5 minutes on each side until the tortillas are browned and the filling is heated through.
  6. Freezing and Reheating: To freeze, place the foil-wrapped burritos in the freezer. To reheat from frozen, bake in foil at 350°F (180°C) for 40 to 45 minutes. Alternatively, thaw and reheat in a skillet as above for a crispy finish. Microwaving is possible (remove foil first) but will not crisp the tortilla.
