Salad Ingredients

  • 2 cups of sliced organic strawberries
  • 2 cups of cubed organic watermelon
  • 2 cups of semi-thick cucumber rounds sliced in half
  • Handful of fresh mint leaves (basil also works nicely)
  • 3/4 cup of crumbled goat’s milk feta
  • 1 tsp of sumac

Balsamic Vinaigrette

  • Juice of 1 lemon
  • 1/3 cup of balsamic vinegar
  • Sea salt and coarse black pepper to taste
  • 23 tablespoons of extra virgin olive oil or avocado oil

Homemade Lemon Poppyseed Dressing (alternative)

  • 3 tbsp of raw honey
  • 3 tbsp of white vinegar or apple cider vinegar
  • 2 tablespoons of extra virgin olive oil
  • 1 tbsp of lemon juice
  • 3 tbsp of real, full-fat mayo
  • 1 tbsp of poppy seeds
  • 1/2 cup full-fat Greek yogurt

Instructions

  1. Prepare ingredients: Slice the strawberries, cube the watermelon, and cut cucumber rounds in half. Pick and rinse fresh mint leaves or basil if using.
  2. Make dressing: Whisk together the balsamic vinaigrette ingredients—lemon juice, balsamic vinegar, sea salt, black pepper, and olive or avocado oil—or prepare the alternative lemon poppyseed dressing by mixing honey, vinegar, olive oil, lemon juice, mayo, poppy seeds, and Greek yogurt until smooth.
  3. Toss salad: In a large bowl, combine the strawberries, watermelon, cucumber, fresh herbs, and crumbled feta. Add sumac for a subtle tangy flavor.
  4. Dress the salad: Pour the dressing of your choice over the salad and gently toss to coat all ingredients evenly. Garnish with extra fresh mint leaves for added freshness.
  5. Serve cold: Serve the salad immediately for best texture and flavor. If not serving right away, keep the dressing separate and toss just before serving to prevent wilting and fermentation. Enjoy chilled, ideally with a glass of cold rosé.
