Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Sauce

  • 1 cup chicken broth
  • 1/2 cup diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Vegetables

  • 1 cup sliced bell peppers (red, yellow, or green)
  • 1 medium onion, sliced
  • 1 cup zucchini, sliced
  • 1 cup corn kernels (fresh or frozen)

Instructions

  1. Prepare the ingredients: Begin by trimming excess fat from the chicken breasts and slicing the vegetables into even pieces to ensure uniform cooking.
  2. Add ingredients to slow cooker: Place the chicken breasts in the bottom of the Crockpot. Pour in the chicken broth and diced tomatoes, then sprinkle the minced garlic, dried oregano, paprika, salt, and pepper over the top. Finally, add the prepared sliced bell peppers, onion, zucchini, and corn kernels.
  3. Cook until tender: Cover the Crockpot with its lid and cook on low heat for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through, and the vegetables are soft but not mushy.
  4. Serve and enjoy: Once cooked, taste and adjust seasoning if necessary. Serve the chicken and vegetables hot, paired with rice, bread, or salad as desired.

Notes

  • Use fresh vegetables for best flavor, but frozen can be substituted if needed.
  • Adjust the seasoning according to your preference, adding more garlic or herbs if desired.
  • To make it spicier, add a pinch of red pepper flakes to the sauce.
  • Ensure chicken is thoroughly cooked by checking internal temperature reaches 165°F (75°C).
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
