Ingredients

Scale

Ingredients

  • 1 cup brown rice, uncooked
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 2 cups water or vegetable broth (for cooking rice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter (optional, for greasing the baking dish)

Instructions

  1. Cook the brown rice: Rinse the brown rice under cold water. In a medium saucepan, bring 2 cups of water or broth to a boil. Add the rice and salt, reduce the heat to low, cover, and simmer for about 40-45 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. Prepare the sweet potatoes: While the rice is cooking, peel and dice the sweet potatoes into small cubes. You can steam or boil the cubes until tender, about 10-12 minutes, then drain well.
  3. Combine ingredients: In a large mixing bowl, gently mix the cooked brown rice, softened sweet potatoes, black pepper, and half of the shredded cheese. Adjust seasoning to taste.
  4. Assemble the casserole: Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil or butter. Transfer the rice and sweet potato mixture into the dish and spread evenly. Sprinkle the remaining cheese on top.
  5. Bake the casserole: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and the casserole is set.
  6. Serve: Remove the casserole from the oven, let it rest for 5 minutes, then serve warm as a nutritious main or side dish.

Notes

  • You can use shredded mozzarella or a cheese blend if preferred.
  • To add extra flavor, stir in herbs like thyme or rosemary.
  • For a creamier texture, mix in a splash of milk or a dollop of sour cream before baking.
  • This recipe is versatile and can be adapted to be vegan by substituting cheese with plant-based alternatives.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
