Vietnamese Caramel Ginger Chicken Recipe

4.9 from 54 reviews

A flavorful Vietnamese dish featuring tender chicken glazed in a rich, sweet caramel sauce infused with fragrant ginger and garlic. This simple recipe combines caramelized sugar and soy sauce to create a glossy, savory-sweet glaze that perfectly complements the aromatic spices.

Ingredients

Scale

Chicken

  • 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces

Aromatics and Sauce

  • 2 tablespoons fresh ginger, minced
  • 3 cloves garlic, minced
  • 3 tablespoons sugar
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tablespoon vegetable oil

Instructions

  1. Caramelize the sugar: Heat the vegetable oil over medium heat in a skillet. Add the sugar and stir continuously until it melts completely and turns a deep amber color, forming a caramel sauce. Be careful not to burn the sugar.
  2. Add chicken and aromatics: Immediately add the chicken pieces to the caramelized sugar, stirring to coat the chicken evenly. Add the minced ginger and garlic, stirring them into the mixture to release their aromas.
  3. Simmer until glazed: Pour in the soy sauce and water. Reduce the heat to low and simmer the chicken, allowing the sauce to thicken and become glossy. Cook for about 15-20 minutes or until the chicken is fully cooked and the sauce has glazed the chicken beautifully. Stir occasionally to prevent sticking.

Notes

  • Use boneless skinless chicken thighs for a tender and juicy texture.
  • Adjust sugar quantity if you prefer a less sweet glaze.
  • Serve with steamed jasmine rice and fresh herbs for a complete meal.
  • Be careful when caramelizing sugar as it can burn quickly.
  • This dish pairs well with pickled vegetables or a simple cucumber salad.
